Air Fryer Buffalo Nuggets

Corn Flakes are easily crushed using an electric coffee grinder, food processor or by placing them in a Zip-lock bag and crushing them using a rolling pin or bottom of a sauté pan. For a consistent texture, you can pass the crushed Corn Flakes through a sieve.

Ingredients:
3         Tbsp       Spice Union
French Chef's Blend, Grilln’ & Roastn’                                 Spice Blend or Ultimate Seasoning Blend
1 1/2    C           Finely crushed Corn Flake cereal (see side note for                               how to crush Corn Flakes)
1 1/2    lb           Boneless chicken breast or chicken thigh meat- cut                               into 1 1/2 inch cubes
1/4       C           Milk
As needed          Shortening spray, such as Pam or Crisco
1/3       C           Frank’s RedHot Original Hot Sauce
1          Tbsp      Butter

  1. In a bowl, combine the cubed chicken meat and milk. Mix to coat the chicken in milk.

  2. In a coffee grinder or using a mortar and pestle, grind the seasoning blend to a fine powder. This will allow the seasoning to mix evenly with the Corn Flakes.

  3. In a bowl, combine the seasoning powder with the crushed Corn Flakes. Mix to thoroughly combine.

  4. Dredge each chicken nugget in the Corn Flake mixture. Be sure to thoroughly coat each piece of chicken. As you coat each piece, lay the chicken nuggets onto a baking sheet in a single layer.

  5. Spray an even coating of the shortening across all the chicken nuggets, then flip them and spray the other side.

  6. Preheat your air fryer to 375°F and your oven to 180°F.

  7. Place a single layer of chicken nuggets in the basket of your air fryer.

  8. Cook the chicken in the air fryer for 3 minutes, turn each nugget over and cook for an additional 3 minutes.

  9. Place the cooked chicken nuggets on a baking sheet and place in the oven to keep warm while you cook the remaining nuggets.

  10. Keep the cooked chicken nuggets in the oven while you prepare the sauce.

  11. Place the Frank’s RedHot in a microwave safe bowl. Heat on high for 25-30 seconds. Remove the bowl from the microwave and stir in the butter until it has completely incorporated into the hot sauce.

  12. Place the chicken nuggets into a large stainless steel bowl, add the hot sauce mixture and toss to coat the nuggets in sauce.

  13. Serve immediately with a side of Bleu Cheese dressing, carrots and celery sticks.
