Shephard's Pie
Shephard's Pie

Ingredients:

3         Tbsp     Butter
1 ½      lbs       Ground meat (lamb, beef, turkey, pork, chicken or any game                                 meat)(you can even use pulled chicken from a rotisserie chicken)
2 ½      Tbsp     Spice Union French Chef's Blend, Wild Game Seasoning, Grilln’ &                           Roastn’ Spice
1 ½      C          Fresh onion- small diced
¾         C          Carrot- small diced
¾         C          Peas- fresh or frozen
2 ½      C          Chicken stock
3          Tbsp     All-purpose flour
5          C          Your favorite mashed potato recipe
3          each      Egg yolks
1          C          Monterey Jack cheese- shredded
½         C          Freshly grated Parmesan cheese

  1. Preheat the oven to 350°F.

  2. Preheat a large sauté pan over medium high heat.

  3. Add the butter to the sauté pan and once the butter stops foaming, add the ground meat.

  4. Cook the ground meat until nicely browned.

  5. Add the onion and carrot to the sauté pan and over medium heat until the onion is translucent.

  6. Add the Spice Union spice blend of your choice and stir to combine.

  7. Add the flour to the sauté pan and stir until all the flour is incorporated into the butter.

  8. Add the chicken stock to the sauté pan and lower the heat to medium low.

  9. Continue to cook the contents of the sauté pan, stirring every 2 minutes until it comes to a boil.

  10. Lower the heat to a simmer and cook for an additional 10 minutes and remove from the stove.

  11. Add the peas to the sauté pan and combine.

  12. To your favorite mashed potato recipe, add the egg yolks, Monterey cheese and Parmesan cheese. Fold together until evenly combined.

  13. Place the contents of the sauté pan into a greased baking dish.

  14. Spread the mashed potato mixture over the top of the baking dish to cover the entire contents of the dish.

  15. Place the baking dish on a sheet pan and place into the oven. Bake for 45 minutes or until the mashed potato topping gets a little brown.

  16. Remove from the oven and let sit for 10 minutes before serving.
