Grilled Eggplant Rollatini


4       lbs              Fresh chicken wings

3       Tbsp           Olive oil

1/3    C                Spice Union Spice for Anything & Everything

  1. Preheat your smoker to 325°F- setting up for indirect cooking.

  2. With a knife, separate the drumettes, flats and tips of each chicken wing.

  3. Pat the drumettes and flats dry with a cloth or paper towel and place in a large bowl.

  4. Add the olive oil and Spice Union Spice for Anything & Everything to the chicken wings. Toss to thoroughly coat.

  5. Place the wings on the smoker, being sure to leave a little space between each wing.

  6. Cook the wings until they reach an internal temperature of 170°F- about 50-60 minutes.

  7. Serve with Ranch or Bleu Cheese dressing and a side of carrots and celery.

  8. Beer, wine, cocktails all work with these delicious wings!
