Apricot Lemongrass Glaze
This glaze is a favorite on every table it has hit. It pairs well with smoked proteins or adds a great aromatic glaze to simply seasoned proteins off the grill.
1 C Apricot preserves
2 Tbsp Fresh Lemongrass (tender root end)- minced
1 Tbsp Fresh Ginger- micro-plane grated
1 Tbsp Fresh Garlic- minced
2 Tsp Black pepper
2 Tbsp Soy Sauce
Combine apricot preserves, minced lemongrass, ginger, garlic, black pepper and soy sauce in a sauté pan.
Bring contents to a simmer and allow to simmer for 5 minutes.
Set aside to cool to room temperature.
Place the apricot mixture into a food processor or blender. Process until smooth.
Set aside until needed.
Store in the refrigerator for up to 3 weeks.
