Bone-In Pork Loin Roast
Ingredients:
1 ea 4 lb Bone in pork loin roast
1/2 lb Light brown sugar
1/2 lb Salt
2 Qts Warm water
2 lbs Ice
3/4 C Spice Union Barbeque Spice Rub
Brine the pork loin roast:

Using a boning knife, trim 1-2 inches of meat from between the rib bones to expose the bones. With the back of the knife, scrape any meat bits from the rib bones until clean.

Place brown sugar and salt in a cooler big enough to fit your pork loin roast.

Add 2 qts of warm water to the cooler and mix until the sugar and salt is dissolved.

Place the pork loin in the brine and top with 2 lbs of ice. The ice will keep the temperature within the 'food safe' zone.

Let the pork loin brine for at least 8 hours.
Cook the pork loin roast:

Remove the pork loin roast from the brine and pat dry with paper towels.

Bring the pork loin to room temperature.

Preheat the oven to 400°F.

On the stove top, preheat a roasting pan to medium high heat.

Place the pork loin in the hot roasting pan, fat cap side down. Sear on all sides of the pork loin until properly browned.

Remove the pork loin from the roasting pan and set on a sheet pan.

Season all sides of the pork loin with the Spice Union Barbecue Spice Rub.

Return the pork loin to the roasting pan, wrap the exposed bones in foil and place into the oven.

Immediately lower the oven temperature to 325°F.

Roast the pork loin until it reaches an internal temperature of 150°F.

Remove the pork loin from the oven and cover with foil. Allow to sit for at least 12 minutes before slicing.

Serve with your signature potatoes and favorite vegetables.
