Classic Shore Lunch
Ingredients:
8 ea 4-6 oz Fresh Walleye fillets
2 C Panko bread crumbs
1/2 C Corn flake cereal (crushed)
Pinch Salt
Pinch White Pepper
1 Tsp Thyme
1/2 C All-purpose flour
2 ea Eggs (scrambled to a froth)
3 C Peanut oil
1/2 C Spice Union Barbeque Spice Rub

Combine the panko, corn flake crumbs, salt, white pepper and thyme in a bowl and mix until well combined.

Preheat the oil in a large cast iron pan to a medium high heat.

Dredge the walleye fillets in the flour and shake off excess.

Dip the fillets in egg, then coat in the panko breading.

Immediately place the walleye fillets into the hot oil.

Fry the walleye fillets until golden brown on the bottom, then turn over and continue to cook until golden brown on both sides.

Remove the walleye fillets from the oil and place on a paper towel to absorb any excess oil.

Immediately season the walleye fillets with Spice Union Barbecue Spice Rub.
