Pan Seared Branzino with Caramelized Garlic
Ingredients:
8 ea 4 oz portions of Branzino fillets
1/3 C Spice Union Garam Masala Spice Blend
2 Tbsp Coconut oil
2 Tbsp Butter
4 Tbsp Corn starch
2 Bulbs Fresh Garlic
2 Tbsp Fresh Lemon Juice
Prepare the caramelized garlic:

Preheat oven to 325°F.

Break down the two garlic bulbs and remove the skin from each garlic clove.

In a small oven proof sauce pan, melt 1 Tbsp of coconut oil over medium heat. Add the garlic cloves to the sauce pan and toss to coat the garlic cloves.

Place the sauce pan into the oven and roast the garlic until starting to caramelize. This will take about 20 minutes.

Remove the pan from the oven and set aside until the garlic is needed.
Prepare the Branzino:

Preheat a cast iron pan on medium high heat.

Liberally season Branzino fillets with Spice Union's Garam Masala Spice Blend.

Add remaining coconut oil and butter to the pan. Heat until the butter stops foaming.

Dredge the Branzino in the corn starch; shaking any excess corn starch from the fish.

Place the Branzino into the cast iron pan, skin side up.

Sear the Branzino fillets for about 3-4 minutes per side or until just barely cooked through.

Add the lemon juice to the pan and swirl to mix into the butter.

Serve over fresh seasonal vegetables, your signature rice or potatoes and garnish the plate with caramelized garlic and pan juice.
