Roast Yukon Gold Potatoes

Ingredients:
2         lbs           Yukon Gold Potatoes- washed
1/3      C             Spice Union Grilln’ & Roastn’ Spice Blend
2         Tbsp        Coconut Oil

1/4      C             Fresh Italian flat leaf parsley- minced

  1. Preheat your oven to 375°F.

  2. Preheat a large oven-proof, non-stick pan to medium heat.

  3. Place the coconut oil in the pan and heat until shimmering.

  4. Add the potatoes and Spice Union Grilln’ & Roastn’ Spice Blend to the pan.

  5. Toss to evenly coat the potatoes in the spice blend.

  6. Place potatoes into the oven and cook for 40-45 minutes, tossing them every 15 minutes.

  7. Remove the potatoes from the oven.

  8. Add the minced parsley to the potatoes and toss.

  9. Serve immediately as a side to any glorious meat feast.
