Smoked Honey Habanero Candied Bacon
Ingredients:
1 ea 5-6 lb Fresh pork belly slab
2/3 C Spice Union Honey Habanero Rub

Preheat your smoker to 160°F; per the manufacturer's directions.

With the pork belly as cold as you can get it without freezing it; on a meat slicer or very carefully by hand, slice the pork belly into 1/8 inch slices.

Lay each spice out onto wire racks or on your smoker’s racks.

Season each piece of bacon with Spice Union Honey Habanero Rub.

Place the wire racks into your smoker.

Smoke the bacon at 160°F for 60-90 minutes.

Increase the temperature of your smoker to 300°F and continue to cook the bacon until most of the fat has rendered out of the bacon or you achieve your preferred doneness.

Serve for breakfast, on egg sandwiches, add a kick to a BTL, top a salad, chicken sandwich or burger. There are so many great ways to use this candied bacon.
