Grilled Pork and Pineapple Kabobs

1/3     C             Spice Union Polynesian Luau Spice Blend
1/4     C             Onion- grated
3        Tbsp        Olive oil
3        Tbsp        Milk
3        lbs           Pork Tenderloin- silver skin removed
1        ea            Fresh Pineapple- cleaned and cut into 1 inch cubes
10      ea            Bamboo skewers

Marinate the Pork:

  1. Combine 1/4 Cup of Spice Union Polynesian Luau Spice Blend, grated onion, olive oil and milk.

  2. Cube the pork tenderloin into 1 ½ inch cubes.  Add pork to the marinade.  Toss to coat.

  3. Marinate for at least 4 hours.

Make the kabobs:

  1. Preheat your grill to high heat.

  2. Soak the bamboo skewers in warm water for 3-4 minutes.

  3. Assemble the kabobs by skewering the pork and pineapple on the bamboo skewers.

  4. Place the kabobs on the grill, directly over the heat source.

  5. Grill the kabobs for about 3 minutes per side or until the pork reaches an internal temperature of 155°F.

  6. Serve over a buttery rice pilaf or with roasted potatoes.
