Grilled Pork Loin Chops with Grilled Fruits
Ingredients:
4 ea 8-10 oz Center cut pork chops
4 Tbsp Olive oil
3 oz Spice Union Polynesian Luau Spice Blend
1/2 ea Fresh pineapple- peeled and cored
1/2 ea Fresh cantaloupe- peeled and seeded
2 ea Fresh peaches- halved and stone removed
1 ea Vidalia onion-small, peeled and halved
2 Tbsp Butter- melted

Preheat the gas/charcoal grill to 375°F, setting up for direct cooking.

Cut the pineapple and cantaloupe into large wedges about 1 inch thick.

Season the fruit and onion with Spice Union Polynesian Luau Spice Blend

Place the fruit and onion on the hot grill over direct heat. Cook for about 4 minutes or until the fruit just barely starts to caramelize. Turn the fruit and continue to cook again until just starting to caramelize.

Continue to cook the onion until soft all the way through.

Medium dice the fruit and onion. Toss with melted butter.

Coat each pork chop with olive oil.

Liberally season both sides of the pork chops with Spice Union Polynesian Luau Spice Blend.

Place the pork chops on the grill, directly over the hottest spot on the grill.

Cook the pork chops for about 7-8 minutes per side or until it reaches an internal temperature of 160°F.

Let the pork chops rest for 3-4 minutes before cutting.

Serve the pork with a generous spoonful of grilled fruit and seasonal vegetables.
