Smoked Pork Tenderloin with Honey Glaze
Ingredients:
1 ea Fresh pork tenderloin
1/2 C Spice Union Polynesian Luau Spice Blend
1/2 C Honey
1 Tsp Garlic – minced
1 Tsp Ginger – minced
1/2 Tsp Black Pepper
Make the honey glaze:

Combine the honey, garlic, ginger and black pepper in a small sauce pan.

Heat until just starting to bubble around the sides.

Remove from the heat and set aside until needed.
Smoke the pork tenderloin:

Preheat your smoker to 225°F- setting up for indirect cooking.

With a sharp, thin knife, trim fat and 'silver skin' off the pork tenderloin.

Liberally season the pork tenderloin with Spice Union Polynesian Luau Spice Blend.

Place the pork tenderloin on the smoker.

Smoke the pork tenderloin at 225°F until it reaches an internal temperature of 130°F. This should take about 90 minutes.

At this time, apply a glaze of the honey mixture to the pork tenderloin.

Continue to smoke the pork tenderloin until it reaches an internal temperature of 145°F, glazing with honey every 10 minutes.

Remove the pork tenderloin from the smoker and let rest for 4-5 minutes. Glaze once again with the honey glaze just before serving.
