Pan Seared Grouper

Ingredients:
4         ea                6-8 oz portions of Grouper fillets
1/3      C                 Spice Union Polynesian Luau Spice Blend
1         Tbsp            Coconut oil
1         Tbsp            Butter

 

  1. Preheat a cast iron pan on medium heat.

  2. Liberally season Grouper fillets with Spice Union Polynesian Luau Spice Blend.

  3. Add coconut oil and butter to the pan until the butter stops foaming.

  4. Place the Grouper into the cast iron pan, skin side up.  

  5. Sear the Grouper fillets for about 3-4 minutes per side or until just barely cooked through.

  6. Serve over a roasted corn and pepper relish.
