Smoked Pork Loin
Ingredients:
1 ea 3-4 lb Boneless pork loin roast
1/2 lb Light brown sugar
1/2 lb Salt
2 Qts Warm water
2 lbs Ice
1 C Spice Union Sweet & Smoky Spice Rub
Brine the pork loin:

Place brown sugar and salt in a cooler big enough to fit your pork loin roast.

Add 2 qts of warm water to the cooler and mix until the sugar and salt is dissolved.

Place the pork loin in the brine and top with 2 lbs of ice. The ice will keep the temperature within the 'food safe' zone.

Let the pork loin brine for at least 8 hours.
Smoke the pork loin roast:

Preheat your smoker to 225°F; setting up for indirect cooking.

Remove the pork loin roast from the brine and pat it dry.

Liberally season the entire pork loin roast with the Spice Union Sweet & Smoky Spice Rub.

Place the pork loin roast into the smoker.

Smoke the pork loin until it reaches an internal temperature of 150°F. Total cooking time should be about 3 hours.

Remove the pork from the smoker, cover with foil and let it rest for 10 minutes before slicing.

Serve with your signature side dishes and a cold beer.
