Grilled Grouper with Sweet & Smoky Spice Rub

4        ea         6-8 oz portions of Grouper  fillets
2        Tbsp     Olive oil
1/2     C          Spice Union Sweet & Smoky Spice Rub


  1. Preheat your grill to high heat.

  2. Brush each fillet with olive oil and liberally season with the Spice Union’s Sweet & Smoky Spice Rub. 

  3. Place the Grouper fillets on the grill- skin side up.  Cook on high heat for 3-4 minutes per side or until the Grouper is just short of being cooked through.

  4. Finish the dish with fresh seasonal vegetables dressed in a light vinaigrette.
