Hasselback Potatoes
Ingredients:
4 ea Yukon Gold Potatoes- large
8 Tbsp Butter- melted
1 ea Sweet onion- thinly sliced
4 Tbsp Spice Union Grilln’ & Roastn’ Spice Blend
2 Tbsp Italian parsley- finely minced
4 Tbsp Parmesan cheese- grated (optional)

Preheat the oven to 400°F.

Taking care not to slice all the way through the potato, slice each potato in 1/4 inch thick slices. Placing wooden spoon handles or chopsticks on either side of the potato helps to prevent cutting all the way through the potato.

In a small bowl, toss the sliced onion with 2 tablespoons of melted butter and 1 tablespoon of minced parsley.

Place the potatoes into a baking dish.

Opening up each sliced potato, brush the remaining melted butter into each slice.

Place a pinch of sliced onion between each potato slice.

Place the baking dish into the oven and bake the potatoes for 35 minutes.

Remove the potatoes from the oven, spoon any butter in the bottom of the baking dish over the top of the potatoes.

Sprinkle a tablespoon of Parmesan cheese over each potato.

Bake the potatoes for an additional 10 minutes.
