Broiled Halibut with Herb Butter
Ingredients:
4 ea 6-8 oz portions of Halibut fillets
1/4 C Spice Union Ultimate Seasoning Blend
4 Tbsp Butter- melted
2 Tbsp Fresh Lemon Juice
2 Tbsp Olive oil
1 Stick Butter- room temperature
2 Tsp Fresh Garlic- minced
1 Tbsp Flat Leaf Italian Parsley- minced fine
1 Tbsp Fresh Thyme- minced fine
1 Tbsp Fresh Basil- minced fine
1 Pinch Salt
1 Pinch Fresh Ground Black Pepper
Prepare the herb butter:

On your cutting board, spread the garlic out in an even layer. Sprinkle the salt over the garlic and let sit for 5 minutes. Using the flat bottom of a coffee cup, mash the garlic together with the salt until a paste.

In a small bowl, combine the butter, garlic, parsley, thyme, basil and black pepper. With the back side of spoon, mix until all ingredients are well combined. Let sit at room temperature until needed.
Prepare the Halibut:

Arrange your oven rack to about 6 inches from the broiler.

Preheat the oven to 400°F.

Brush an oven proof pan with the olive oil; this will prevent the fish from sticking to the pan.

Season both sides of the Halibut fillets with Spice Union Ultimate Seasoning Blend.

Place the Halibut fillets into the oven proof pan and drizzle the melted butter and lemon juice over the top of each fillet.

Change the setting on your oven to preheat the broiler for 6-7 minutes. Remember to crack the oven door when broiling.

Place the pan of Halibut under the broiler and cook for approximately 7-8 minutes. Keep an eye on the Halibut to make sure it doesn’t get too browned on the top.

If the Halibut starts to brown too much, move the pan to a rack in the middle of the oven and continue to cook in the oven at 400°F.

Serve the Halibut with the herb butter spooned over the top of each piece of fish and lemon wedges on the side.
