Avocado-Lime Mousse
Pan Seared Snapper with Avocado-Lime Mousse

Ingredients:
2       ea       Ripe avocados
2       Tbsp    Fresh lime juice
3       Tbsp    Olive oil
1       Tbsp    Sour cream
1       Tsp      Garlic- minced
Pinch            Salt
Pinch            Pepper
4       ea       6-8 oz Snapper fillets
3       Tbsp    Spice Union Ultimate Seasoning Spice Blend
2       Tbsp    Butter- melted
1       ea       Tomato- diced
                    Cilantro Sprigs


Prepare the avocado-lime mousse:

  1. Remove the avocado flesh from the skin and place into a blender.

  2. Add the lime juice, olive oil, sour cream, garlic, salt and pepper to the blender. Blend until light, airy and smooth.


Prepare the Snapper:

  1. Preheat a cast iron pan to medium high heat.

  2. Season the Snapper fillets with Spice Union Ultimate Seasoning Blend.

  3. Add the butter to pan.

  4. Place the Snapper fillets skin side down in the cast iron pan.

  5. Sear the Snapper on 3-4 minutes per side or until just barely cooked through.

  6. Top the Snapper fillets with the avocado-lime mousse, diced tomato and sprigs of cilantro.

  7. Serve with seasonal vegetables.
