Grilled Antelope Chops & Loin
Ingredients:
2 ea Antelope Tenderloin
8 ea Antelope Rib Chops
1/4 C Olive oil
1/4 C Spice Union Wild Game Seasoning Blend

Bring the antelope meat to room temperature.

Preheat your grill to the highest heat possible.

With a sharp, thin knife, trim the fat and 'silver skin' off the tenderloin and French the rib chops by removing fat and meat from the rib bone.

Brush the antelope tenderloin and rib chops with the olive oil.

Liberally season the antelope with Spice Union's Wild Game Seasoning Blend.

Place the antelope tenderloin and rib chops on the hottest part of the grill.

Grill the tenderloin and rib chops for about 3 minutes on the first side. Turn over the tenderloin and rib chips, still keeping them on the hottest part of the grill.

Cook the antelope until the internal temperature reaches 130°F. This should take about 6-7 minutes in total.

Remove the antelope tenderloin and rib chops from the grill and let rest for 4-5 minutes before slicing the tenderloin across the muscle fibers, on the bias.

Serve with your signature potatoes and seasonal vegetables.
