Boar Burger with Crème Fraîche
Ingredients:
1 2/3 lbs Ground Wild Boar Chuck meat
1/3 lb Ground Wild Boar Belly meat or bacon
1/2 C Spice Union Wild Game Seasoning
2/3 C Crème Fraîche (click here for the recipe)
4-6 ea Hearty burger rolls
4-6 ea Thick tomato slices
4-6 ea Large leaves of green leaf lettuce

Place all the wild boar chuck meat, belly meat and 2 Tbsp of Spice Union Wild Game Seasoning Blend in a large bowl.

Gently mix the wild boar meat with the Wild Game Seasoning until uniformly combined.

Cover the bowl with plastic wrap and place the bowl in the refrigerator for at least 2 hours. This will allow the meat to relax and flavors to combine.

Preheat a large cast iron pan to medium high heat.

Using a mold (jar lid or food mold) lined with plastic wrap, form the burgers. You should get 4 to 6 burgers from this recipe.

Season both sides of the burgers with Spice Union Wild Game Seasoning.

Place the burgers into the hot cast iron pan.

Cook the burgers for 4-5 minutes on each side; being sure to get a good sear on both sides. The internal temperature of the burgers should be 155°F.

Dress the burger rolls with the green leaf lettuce and tomato slices.

Place the burger on top of the tomato slice and top with a large dollop of Crème Fraîche.
