Pan Seared Duck Breast with Star Anise Infused Maple Glaze
Ingredients:
2 lb Duck Breast
1/2 C Spice Union Wild Game Seasoning Blend
1/2 C Maple Syrup
3 ea Star Anise Pods

In a small sauté pan, combine the maple syrup and star anise pods. Bring to a simmer and reduce to 1/4 cup. Set aside.

Bring the duck breasts to room temperature.

Preheat oven to 375°F

Rub the duck breasts with Spice Union's Wild Game Seasoning Blend. Massage the seasoning all over the duck breast.

Place the duck breasts into a cold cast iron pan, skin side down.

Turn heat to medium and cook until the duck breasts start to shrink and gets just a hint of brown around the edges.

Turn up the heat on the cast iron pan to medium high heat and continue to cook for 90 seconds on the burner.

With the duck breasts still skin side down, place the cast iron pan into your oven for 6-7 minutes. (internal temp: 135°F).

Remove the duck breasts from the oven and the cast iron pan. Set aside to rest for 4 minutes.

Pour the star anise infused maple syrup into the cast iron pan to blend with the pan drippings and to warm through.

Slice the duck breast on the bias, about 1/2 inch thick.

Plate the duck breast and spoon over the infused maple syrup.

Serve with roasted root vegetables and your signature potatoes.
