Grilled Elk Tenderloin
Ingredients:
1 ea 20-24 oz Elk Tenderloin
1/2 C Olive oil
3/4 C Spice Union Wild Game Seasoning Blend

Bring the elk tenderloin to room temperature.

Preheat your grill to the highest heat possible.

Brush the elk tenderloin with 4 Tbsp of olive oil.

Liberally season the elk tenderloin with Spice Union's Wild Game Seasoning Blend.

Place the elk tenderloin on the hottest part of the grill.

Roll the elk tenderloin a 1/4 turn every 2-3 minutes to sear all sides.

If the elk tenderloin starts to brown too much over the direct heat, move it to a less hot area of the grill.

Cook until the internal temperature reaches 130°F.

Remove the elk tenderloin from the grill and let rest for 4-5 minutes before slicing across the muscle fibers.

Drizzle with olive oil and serve with grilled bell peppers and onions and your signature potatoes.
