Amazing Baked Beans
Ingredients:
4 ozs Salt pork- rind removed and cut into 1/3 inch cubes
2 slices Bacon- cut into 1/4 inch pieces
1 C Onion- small dice
1/2 C Molasses
1 1/2 Tbsp Brown mustard
1 lb Dried small white beans- rinsed and picked over to remove any pebbles
1 1/4 Tsp Salt
9 C Water
1 Tbsp Molasses
1 Tsp Apple cider vinegar
1 Tsp Black pepper

Adjust an oven rack to the lower-middle position and preheat the oven to 300°F.

In a large Dutch oven, over medium heat, render the salt pork and bacon until well browned.

Add the onion to the Dutch oven and cook until the onions are translucent.

To the Dutch oven, add the 1/2 cup of molasses, brown mustard, dried beans, salt, and water.

Increase the temperature to medium high heat and bring the mixture to a boil.

Cover the Dutch oven and set the Dutch oven in the oven.

Bake until the beans are tender (about 4 hours), stirring only once, after 2 hours of cooking time.

Remove the lid from the pot and continue to bake the beans until the liquid has thickened to a syrupy consistency (about 60-90 minutes longer).

Remove the beans from oven; stir in the remaining tablespoon of molasses, apple cider vinegar, and adjust the seasoning with salt and pepper.
