Crème Fraîche
Ingredients:
3 C Heavy cream
1/4 C Full fat buttermilk

In a medium sized sauce pan, warm the cream to take the chill off; 70-80°F.

Pour the cream into a large glass jar.

Add the buttermilk to the cream and stir to combine.

Cover the glass jar with cheese cloth and leave on the counter, for 24 hours.

After 24 hours, minimally, yet gently, swirl the cream mixture.

Put the lid on the glass jar and place it in the refrigerator for another 24 hours.

Serve with meats, fish, fruit, vegetables, pancakes or pastry. You can sweeten the Crème Fraîche with honey, fruit puree or brown sugar.
