Fire Seared Bison Tenderloin
Ingredients:
2 lb Bison Tenderloin Steaks
4 Tbsp Olive oil
1/2 C Spice Union Wild Game Seasoning Blend

In your wood burning grill, build a hardwood fire using your favorite hardwoods. For grilling bison, we recommend fruit wood or oak.

Because we are looking for a hot hot fire with some flame to sear the bison steaks, do not let your hardwoods burn all the way down to hot coals.

Bring the bison steaks to room temperature.

Rub the Bison steaks with olive oil and season with Spice Union Wild Game Seasoning Blend.

With the fire as hot as possible, place the Bison steaks on the hottest part of the grill; directly over the flames.

You want you grill grates to be about 2-3 inches above the wood.

Sear the bison steaks for 2 minutes per side and move them to a part of your grill that is still hot, but not directly over the flame.

Continue to cook the bison steaks to your desired doneness (internal temps: 125°F for rare, 130°F for med-rare).

Let the Bison steaks sit for 4-5 minutes before slicing.

Serve with your signature potatoes and seasonal vegetables.
