Grilled Lamb Blade Steaks with Fennel
Ingredients:
4 Tbsp Olive oil
2 ea Bulbs of fresh fennel
2 Tsp Salt
2 Tsp Pepper
4 ea 6-8 oz lamb blade steaks
1/3 C Spice Union Garam Masala Blend
Prepare the fennel:

Preheat your grill to high heat.

Remove the greens from the fennel, leaving 1-2 inches of green stalks extending from the bulb.

Wipe the fennel clean with a damp cloth.

Trim the stem from the fennel and split the fennel down the middle from the green to the stem.

Brush the fennel bulbs with 2 Tbsp of olive oil and season with salt and pepper.

Place the fennel on the hot grill, flat side down.

Grill the fennel for 4-5 minutes per side, then set aside on a less hot part of your grill.

Continue to cook the fennel until just starting to soften.

Remove the fennel from grill and set aside until plating the dish.
Prepare the lamb blade steaks:

Brush the lamb blade steaks with remaining olive oil.

Season liberally both sides of the lamb steaks with Spice Union Garam Masala Blend.

Place the lamb blade steaks on the grill, directly over the heat source.

Grill the lamb blade steaks for about 3 minutes per side or until the lamb reaches an internal temperature of 130°F.

Remove from the grill and plate with the grilled fennel.
