Roasted Rack of Lamb with Garam Masala Spice Blend

1        ea                1-2 lb Rack of lamb
1/3     C                 Spice Union Garam Masala Spice Blend


  1. Bring the rack of lamb to room temperature.

  2. Preheat a cast iron pan to medium heat and your oven to 325°F.

  3. Remove the lamb rack from the package and pat dry with a paper towel.

  4. Season the rack of lamb with Spice Union Garam Masala Spice Blend.

  5. Place the rack of lamb in the cast iron pan, fat cap side down.

  6. Sear the lamb rack for about 4 minutes or until it is nicely browned on the fat cap.

  7. Turn the rack of lamb over and sear for another 2 minutes.

  8. Place the cast iron pan into the oven and roast until the lamb rack reaches an internal temperature of 130°F (25-30 minutes).

  9. Allow the lamb rack to rest for 4-5 minutes before cutting.

  10. Serve with fresh seasonal vegetables.
