Grilled Skirt Steak with Beef Barbeque Rub

4        ea                 6-8 oz Skirt Steaks
1/4     C                  Olive oil
1/4     C                  Spice Union Beef Barbeque Rub


  1. Bring the Skirt steaks to room temperature.

  2. Preheat your grill to the highest heat possible.

  3. Brush the Skirt steaks with 2 Tbsp of olive oil.

  4. Liberally season the skirt steaks with Spice Union's Beef Barbeque Rub.

  5. Place the Skirt steaks on the hottest part of the grill.

  6. Grill the Skirt steaks for about 4 minutes on the first side.  Turn over the Skirt steaks, still keeping them on the hottest part of the grill.

  7. Cook until the internal temperature reaches 120°F.

  8. Remove the Skirt steaks from the grill and let rest for 4-5 minutes before slicing across the muscle fibers on the bias.

  9. Drizzle with olive oil and serve with grilled seasonal vegetables.
