Smoked Chicken with Polynesian Luau Spice Blend

8        ea              Chicken Thigh/Leg Pieces- skin on

3        Tbsp           Olive oil
3        oz               Spice Union Polynesian Luau Spice Blend


  1. Preheat your smoker to 325°F- setting up for indirect cooking.

  2. Drizzle the olive oil over the chicken pieces.  Rub the olive oil to thoroughly coat each piece of chicken.

  3. Liberally season all sides of the chicken pieces with Spice Union Polynesian Luau Spice Blend.

  4. Place chicken on the indirect heat side of the smoker.

  5. Cook the chicken for about 60-70 minutes or until it reaches an internal temperature of 170°F.

  6. Let the chicken rest for 5-7 minutes before cutting.

  7. Serve with a side of Alabama White Barbeque Sauce (click here for the recipe) and your signature side dishes.
