Elk Rump Roast
Ingredients:
1 ea 4 lb Elk Rump Roast
1/2 C Spice Union Wild Game Seasoning Blend
1 Tbsp Coconut Oil

Bring the elk rump roast to room temperature.

Using a thin knife, trim away any silver skin that may be on the rump roast.

Season the elk rump roast on all sides with Spice Union Wild Game Seasoning Blend.

Preheat the oven to 400°F.

On the stove top, preheat a cast iron pan and coconut oil to medium high heat.

Once the coconut oil is shimmering, place the elk rump roast in the hot cast iron pan. Sear on all sides of the roast until properly browned.

Place the cast iron pan into the oven and immediately lower the oven temperature to 325°F.

Roast the elk rump roast until it reaches an internal temperature of 125°F. Total cooking time should be approximately 60 minutes.

Remove the elk rump roast from the oven and cast iron pan.

Cover the elk rump roast with foil and let sit for 10 minutes before slicing.

Serve with your signature potatoes and seasonal vegetables.
