Smoked Shrimp

2         lbs                Peeled & deveined shrimp (size U-10 recommended)

1/4      C                  Spice Union Honey Habanero Rub

2         Tbsp             Butter- melted

  1. Preheat your smoker to 150°F; per the manufacturer's directions.

  2. Place the shrimp into a bowl and add the Spice Union's Honey Habanero Rub.

  3. Toss the shrimp to thoroughly coat.

  4. Place the shrimp into the smoker.

  5. Smoke the shrimp for 45-60 minutes at 150°F.

  6. After the initial smoke time, quickly take the shrimp off the smoker and place into a bowl.

  7. Increase the temperature of your smoker to 350°F.

  8. Add the melted butter to the shrimp and toss to coat.

  9. Once your smoker reaches 350°F, put the shrimp back into the smoker and cook for about 5 minutes.  This cooking time will ensure the shrimp are cooked through.

  10. Serve with a cold beer or an easy drinking white wine, such as a Pinot Grigio.
